I’m looking to track clicks, referred sites, keywords and conversions for multiple domains that I own with some open source web analytics software. Open source is a must with downloadable source code that runs on LINUX.

You can’t really answer that with a single response unfortunately. Often the answer will be yes, but you do need to be careful for many of the reasons others have posted (frequency of updates, compatibility, amount of development, etc…). If you stick to the major open source software projects, you will generally have success. That’s not to say that a smaller open source can’t meet your needs though.
When using any open source software, keep in mind that just because it is open source, it doesn’t mean that it doesn’t have some restrictions. I’m guessing it won’t matter as much for a school, but where I work, including open source software does have some implications depending on the open source license (i.e. can it coexist with close source software or does my employer need to open source their software if integrated with it?).
Keep in mind when selecting hardware or software that many commercial vendors do offer educational discounts for their products. Weigh the cost of the admin staff and the training versus the savings by going with open source. You may find that a mix of commercial and open source works best for you.
On a personal note, I would love to see more schools consider open source software regardless of cost. A Linux OS plus OpenOffice and some of the Apache or SourceForge project applications makes for an interesting system. The county I live in actually had the public libraries all switch over to a Linux OS, OpenOffice, and Firefox for all their systems and most users seemed to handle it pretty well.

I’m mainly looking for 3D animators and eventually beta testers. I’m also eventually going to be looking at approaching composers and artists about purchasing the rights to some of their works so that I can use it in the project. Any advice would be greatly appreciated.

Some might, but I think most people will still be using whatever came preinstalled on their computer. And I know that for some people trying to use Linux would be a nightmare. Things that would be simple in Windows turn into a mess that can take days to sort out. (Assuming the issue can be sorted out at all.)
I’ve got computers that can run Linux. (One a dual boot, another a USB Linux dist, and one that had straight Slackware before the HD died.) I actually got and used the Playstation 2 Linux Kit. I’ve got Cygwin in Windows because I prefer grep to windows Find Files and Folders when searching file contents. Back in the day I’ve even done some simple assembly language programming on an Apple IIE. But I couldn’t get my printer working on one computer or get wireless working on another computer. So I don’t think Linux is quite ready for John Q. Public who’s used to autoplay installers doing all the work for him.
And gamers will use the OS that the games they like are available on. (Far as I know UT3′s not available on Linux yet.)

I am a start up. I do not have capital but once I do I can put it towards Adobe Creative suite.
In the meantime, does anyone know of a site that correlates all the best software with its opensource freeware version?
For example, Dreamweaver — NVU
Photoshop—Gimp___paint.net
etc etc.
I am especially interested in something similar to
Flash
and Adobe CAPTIVATE.
Ultimately, I would like to create a really good learning management system. Check out ellis college of new york done by the Cardean learning group. the site they put together is fantastic. Id like to be able to do something like that someday. in one of their whitepapers they talk about their architecture, conssiting of
apache, flashremoting server, tomcat j2ee, edge, uid, xerces, oro, jetspeed, velocity, turbine, jide, oracle, flash communication server, etc.
where to start?
